2 cups rolled oats
1 cup raisins
1 or more cups unsweetened coconut
2 small apples, grated
1 or more cups soymilk
1/2 cup slivered almonds or favorite chopped nut
1 16 oz. can apricots or peaches (in natural juice)
1 16 oz. can crushed pineapple (in natural juice)
2 tsp. cornstarch or arrowroot
In 8 X 8 baking dish, sprinkle 1/3 cup of the oats on the bottom of the dish. Next, layer 1/2 cup raisins, 1/2 cup. coconut, 1/3 cup. oats, and all of the apples. Pour on 1 cup milk. Continue to layer the remaining raisins, oats and coconut. Top with almonds. Bake at 350 degrees for 30 minutes. Drain juice from apricots or peaches and pineapples and keep. Mix 1/4 cup of the juice with cornstarch. Add remaining fruit juice and cook until thick, stirring constantly with whisk. Add canned apricots/peaches and pineapples and heat through. Pour this mixture over oat casserole before serving.
