Dry Ingredients:
2 cups whole wheat flour
3/4 cup natural sugar
1 tsp. non-aluminum baking powder
1 tsp. coriander
1/2 tsp. salt
1/8, tsp. cardamom (optional)
1/2 cup walnuts or pecans, chopped (optional)

Wet Ingredients:
1/2 cup applesauce
1 tsp. vanilla
1/4 cup soy milk or water
3 mashed ripe bananas

Preheat oven to 350 degrees. Mix together all dry ingredients in a large bowl. In a separate bowl, beat together all wet ingredients. Pour wet ingredients into dry while stirring, only stir until everything is combined. Be careful not to over stir, you’ll want to see a few lumps. Pour into a greased loaf pan or into a muffin pan and bake for 60 to 70 minutes.

Alternatives: You can also add 1/2 cup of carob chips, blueberries, or other fruit.
