Bruschetta

1/2 medium onion, finely diced
1 large tomato, diced
1 Tbsp. dried basil (can use 3-4 fresh leaves)
1 Tbs. lemon juice + 1/2 tsp. Bragg’s Liquid Aminos (mix together)
1 tsp. olive oil
Crusty whole-grain bread
1 clove garlic, minced

Slice the bread into about 6 nice and thick slices (slicing on the diagonal is nice) and place on a prepared cookie sheet. Drizzle some extra olive oil on the bread. Broil for about 4 minutes–DON’T leave unattended–burns very quickly–no need to turn bread over.

While toasting bread, combine all other ingredients in a medium sized bowl and set aside.

Remove bread from oven when golden brown. May rub exposed edge of a whole garlic clove, sliced in half, over bread for flavor if desired before you mince the garlic and add to bowl of tomato/onion mixture. Place bread on a platter and spoon tomato/onion mixture over pieces.
