CASHEW MAYONNAISE

1 1/4 cup boiling water
1 cup raw cashews (rinsed)
1/4 cup lemon juice (fresh is best)
1 Tbsp. honey
1 tsp salt
Tofu (1/4th to 1/3rd piece from a block)

*Blend all until smooth (2-3) minutes….Chill
