Cashew “Nacho” Cheese

1/4 cup raw cashews
1 4 oz. jar pimientos or red roasted bell peppers (the darker, the better)
1 tsp. lemon juice
2 Tbsp. nutritional yeast flakes, optional
2 cups water
1 Tbsp.tahini or sesame seeds, optional
Garlic powder, to taste
Onion powder, to taste
Salt, to taste

In a good blender add dry ingredients first, then wet ingredients. Blend well. blend until it looks smooth. If you have a good blender, like a VitaMix, it will thicken as you blend. Otherwise, pour contents into a saucepan on medium heat. Stir constantly until it thickens.

    I used almonds instead of cashews because my son is allergic to cashews. It still comes out with a great taste
