Delicious Pasta with Pesto

1/3 cup fresh basil, finely chopped
1/4 cup parsley (finely chopped if fresh, but may also used dried)
2 cloves garlic
1/2 cup pecans, cashews, walnuts, pine nuts, OR sunflower seeds
1/2 cup olive oil
1/3 cup Parmesan cheese (Use vegan or recipe)
1 tsp. salt
2 scoops soy milk powder OR 1/4 cup liquid soy
1 box whole-grain pasta, cooked & drained according to box directions

Blend all ingredients in blender until smooth. Place in refrigerator until thickened. When ready to use, just add more water or soy milk if desire to thin. Toss pesto with pasta and enjoy.
