2 1/2 cups oat groats (this is not oatmeal)
Enough water to cover groats in blender at least 1 inch over
3-6 dates (depending on how sweet you like it)
1 tsp. salt
2 tsp. vanilla
1 Tbsp. coriander
pinch of cardamom
soy milk

THE NIGHT BEFORE: place oat groats in blender and cover with enough water to have about an inch of water on the top of the groats. Soak overnight in refrigerator.

IN THE MORNING, add the remaining ingredients to the blender and blend until smooth. Add soymilk and/or water to adust the mixture’s consistency. It should be a more on the thin side than thick (it will thicken as it stands). Bake in waffle iron until through. These are great and really easy.

Note: You can also add sunflower seeds to the waffle iron before placing on the batter. It adds a nice crunch to the waffle and also helps it not to stick to the waffle iron.
