1/3 cup brown rice syrup
1/4 cup + 1 Tbsp. vegan buttery spread, softened (I use Earth Balance whipped)
4 3/4 cups powdered natural sugar (or take 4 3/4 cup regular natural sugar + 9 Tbsp. cornstarch & run through blender until a powder consistency)
1 1/2 – 3 tsp. of peppermint oil/extract ( I like more)
a bag of carob chips, sweetened

Whip together syrup, 1/4 cup margarine, and peppermint (easiest in a mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff. Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It’s easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on. Melt the chips with 1 Tbs. margarine until creamy and stir-able. Take it off the heat so it doesn’t burn. Coat the patties with the carob or chocolate. This is the messy part and I haven’t found an alternative way without special equipment. Nonetheless a fun awesome recipe to do alone or with family. As I said I recommend a little more peppermint but that’s entirely up to you. Please enjoy!
