1 1/4 cup Boiling Water
1 cup raw cashews (rinsed well)
1/8 – 1/4 cup fresh lemon juice
1 Tbsp. Honey
1 tsp. salt
Blend on high for 2-3 minutes til smooth and creamy (works best in a power blender like Vitamix or Healthmaster). Let sit in blender for 20 minutes before touching…If you do this, it will be the same consistency as regular Mayo. Refrigerate and chill.
Warning…If you put too much water, this recipe will be liquidy and not like Mayo consistency…start with about 3/4 cup boiling water and work your way up…
