Super Easy Mock Tuna Salad

1 – 15oz. can chickpeas, drained and rinsed
2T. soy vegan mayonnaise
1T. vinegar-free pickle relish
1/4 cup celery, chopped fine
1/4 cup green onions, chopped fine (optional)
1/4 tsp. kelp
salt, garlic & onion powder, to taste

In small bowl, mash chickpeas. Add soy mayonnaise, pickle relish, salt and seasonings and mix well. This is wonderful in as a sandwich with some chopped tomato!

Makes 4 servings, Preparation time: 5 minutes
