Sauce 1:
1 box Mori-Nu Tofu
1/2 cup water or soy milk
1-2 cloves garlic (depends on how much you like garlic)
1 tsp. salt
2 tsp. onion powder
2 tsp. parsley
1 Tbsp. sweet basil
3 heaping Tbsp. nutritional yeast flakes
1 Tbsp. olive oil
Juice of one lemon (fresh)
Put all ingredients except lemon juice in blender and blend until creamy. Add lemon juice while blending.
Sauce #2
3/4 cups raw cashews (slivered almonds work too)
1 cup water
1 heaping Tbsp. nutritional yeast flakes
1 Tbsp. onion powder
1/2 tsp. garlic powder
1 tsp. salt
1 Tbsp. fresh lemon juice
1/4 cup olive oil
Blend all ingredients in blender until smooth. Heat sauce over medium heat until thickened.
Fettuccine Alfredo:
1 large box fetuccine noodles
dried parsley flakes for color
Cook alfredo noodles according to directions on box. Once drained, place in large cooking pot and add Sauce #1. Heat through and then add Sauce #2. Stir to mix sauces with noodles. Stir in some parsley for color.
Delicious!
