Tofu-egg Salad

Original recipe from “Main Dishes”, A Taste of Heaven, Book 4 by Kyong C. Weathersby, Delicious Vegan Vegetarian Cookbook, wwwl,kyongcw.com

1 pkg tofu, firm, water packed
1/4 tsp turmeric
1/4 tsp sea salt
1 T nutritional yeast flakes
1 T chicken like seasonings
1/4 tsp garlic powder
3/4 c Tofu “Miracle Whip” (see below)

Crumble tofu in a bowl. Mix remaining ingredients. Use it as sandwich filling, or serve on toast, crackers, baked chips, etc. Delicious.

TOFU “MIRACLE WHIP”:

1 pkg tofu, firm, Mori-Nu silken
1/4 c soy milk powder
2 T lemon juice
1/2 tsp onion powder
1 tsp sea salt
2 T canola oil
1/4 tsp garlic powder
2 T turbinado sugar

Blend all ingredients until smooth. Chill.
