Tofu Whole-Wheat Rolls

2 Tbsp. dry yeast
1 4 c. honey
1 1/2 c. warm water
1 1/2 tsp. salt
1 (12.3 oz) pkg. Mori-Nu firm tofu (may use light)
1/2 c. gluten flour
4 to 5 c. whole wheat flour

Place 1 1/2 cups water, yeast, honey, salt and rinsed tofu in a mixing bowl and mix with wire whisk and/or wooden spoon. Add 2 to 3 cups flour and begin kneading. Add 1/2 cup gluten flour and continue kneading. Add enough of the remaining flour and mix until the dough isn’t sticky. Knead for 6 more minutes. Remove dough from bowl and place on floured bowl. Divide the dough into 4 equal sections. Cover the sections with a clean cloth until ready to form into rolls. Place one section on the floured covered board and roll with a rolling pin into a large circle. Cut with a knife into 12 triangles. Roll up and place on a sprayed baking sheet. Place in a warm oven for 30 minutes. Turn oven to 350 degrees and bake until lightly golden on the bottom. Roll each of the remaining sections at one time. Place on a baking sheet and cover with cloth until double in size. Bake one pan at a time at 350 degrees until the bottom of the rolls are lightly golden (about 10 minutes). Don’t overbake them. These freeze nicely. Warm in oven before serving.
