Vegan Carob Cake

3 cups flour
2 cups sugar
6 Tbsp. Carob powder
4 tsp. non-aluminum baking powder
1 tsp. EnerG egg replacer in 2 tsp. water
1 tsp salt
2 cups water
3/4 cup oil
2 Tbsp. lemon juice
2 tsp. vanilla
Mix egg replacer in water until no lumps. Set aside and mix with wet ingredients. Preheat oven 350. Mix dry ingredients first. Then mix in wet ingredients until no lumps. Pour into 2- 9inch round pans or 1- 13×9 inch pan. Bake approximately 40 min or until toothpick comes out clean in center. Let cool before serving.
