Easy Pineapple Lemon Pie
3/4 litre pure pineapple juice (about 3 1/8 cups)
1 large lemon
1 cup acacia honey
Pinch of salt
1 teaspooon vanilla essence
1 cup of coconut cream
1/2 cup of cornstarch
Base: (or use your favorite crust)
1 packet of wholemeal biscuits eg Hobnobs or vegetarian digestives
1/2 cup of olive oil
Put the digestives in a food processor along with the digestives and process until crumbly.
Put the mixture into a flan dish and press down until firm
Put into a blender the toppings ie juice, lemon, honey etc and blend until smooth
Pour this mixture into a pot and heat up until it starts to bubble and get firm
Pour this mixture on top of the flan base
Let it set and place in fridge until needed.
